Get Your Aprons Ready: Anri’s Biltong & Cheese Muffins

Let’s gather what you need for these tasty savoury muffins South Africa loves!

  • Preparation time: 15 mins
  • Cooking time: 20 mins

Ingredients:

  • 130g biltong, finely chopped
  • 45 g (3T) margarine, melted
  • 500ml (2 cups) self-raising flour
  • 30ml (2T) sugar
  • 2 eggs
  • 250ml (1 cup) milk
  • 250ml (1 cup) Cheddar cheese, grated
  • 45ml (3T) Bovril
  • 15ml (2T) chopped parsley

Equipment:

  • Muffin pan
  • 2 medium-sized mixing bowls
  • 1 big spoon for mixing
  • Cooking spray

Method: Let’s Get Baking!

Making these muffins is a great cooking with kids activities session. Assign age-appropriate tasks!

  1. Adult/Older Child: Preheat your oven to 190˚C.
  2. Adult/Older Child: Spray the muffin pan well.
  3. Adult/Child: Melt the margarine. Mix the melted margarine and parsley together and set aside to cool.
  4. Child Task: In a separate bowl, whisk the eggs, milk, and Bovril together.
  5. Child Task: Add the cooled margarine/parsley mixture to the egg mixture and mix well.
  6. Child Task: Stir in the grated cheese and chopped biltong.
  7. Child Task: Gently fold the self-raising flour into the wet mixture using the big spoon – don’t overmix!
  8. Child Task: Use a tablespoon to fill each muffin hole about halfway.
  9. Adult: Bake for approximately 20 minutes, or until golden brown and cooked through.
  10. Adult: Carefully remove the muffins from the pan and let them cool on a wire rack before enjoying your delicious homeschool lunch ideas.
